Cooking time: 20 mins
Ingredients
1 tomato
1 medium sized carrot
Pinch of black pepper
1 teaspoon of Ghee/butter
Salt to taste
Method
1. Blanch the tomatoes by putting them in boiled water for 5 mins.
2. Meanwhile, peel and roughly slice the carrot (since we will be pureeing the soup, you don’t need to finely chop)
2. In another pan, saute ghee/butter and add the tomato and the chopped carrot. Saute for a few mins and then add 1/2 cup of water. add salt and black pepper
3. Let it boil for 10 mins till the carrot becomes soft (not mushy).
4. Puree the mixture and serve hot
Notes: I make the above for my 1 year old girl. You may want to adjust the quantity based on your kiddos diet. To make it healthier you can add chicken broth/vegetable broth instead of water.
Also to make it more nutritious, I add few spinach leaves or broccoli.
